Frittata (Bacon, Onion & Cheddar)

T

rying to explain what a frittata was to my fiancé (who is, to his defence, South African) went a bit like this…

It’s like a Spanish tortilla…

Its like a giant omelet with tasty stuff in it…

Its like a quiche without a crust…

Whilst these all helpfully describe this Italian egg dish, I feel the later is the best choice and far quicker than having to make pastry but all the satisfaction of the contents. That said it is SUCH a versatile recipe for adding in anything you’d usually do with your quiche – spinach, flaked salmon, smoked haddock, chorizo, peppers, chicken, feta, chorizo…its endless and a good fridge raider meal as long as you’ve got a pack of eggs.

It started out as our vegetarian Monday night meal…and then I added bacon. But add mushrooms & feta and it makes an excellent vegetarian sharing brunch dish. Or instead of using a frying pan, tip the mixture into individual muffin wholes for bitesized ‘frittata’ snacks! Perfect warm or at room temperature and a really quick dinner fix.

The fresh courgette salad here was the perfect light and zesty side which I’d recommend. But a simple salad would also go down a treat. I cannot stress the simplicity of this one. Sometimes going back to basics is so rewarding.

Serves 4 

  • 6 large free range eggs
  • 3 thick cut or 6 skinny rashers smoked bacon
  • 1 large or 2 small white onions, sliced
  • 2 garlic cloves
  • 1/2 bag kale or a few big handful
  • 1 large handful grated cheddar cheese (gruyere would also be amazing here 50/50 with cheddar)
  • Few sprigs rosemary or thyme (optional)
  1. Preheat the oven to 220.
  2. Heat a frying pan over a medium heat and add a splash of olive oil. Gently saute the onion for about 8-10 minutes with some salt and freshly ground pepper. You want it to turn soft and golden so it needs slow and low cooking (often covered with a lid if you can to create some steam). After this time the onions will sweeten.
  3. Chop the bacon into the pan in bitesized pieces and cook for a few minutes.
  4. Crush the garlic and add with the chopped rosemary/thyme if using and cook gently for a few minutes.
  5. Whilst this is cooking, bring a pan of water to the simmer and plunge in your kale. Cook for just 1 minute and then drain and leave to dry.
  6. Once the onion and bacon are cooked, add the kale and mix to combine.
  7. Whisk the eggs in a big jug with some salt and plenty of pepper. Grate in the cheese using about 1 big handful but as much as you like really.
  8. Turn the heat to a medium low on your frying pan and quickly pour oven the egg/cheese mixture evenly making sure it fills all the gaps in the pan. Allow to cook for about 30 seconds to form a bit of a crust around the edge before popping the frying pan in the oven.
  9. Cook for 8-10 minutes until golden on top! It won’t take long to cook so it should be set in the middle fairly quickly and even puff up and ‘soufflé’ a little.
  10. Remove from the oven and carefully (and skilfully!) slide it out onto a serving board. If is ends up in one piece, nice job.
  11. Serve with a lovely simple salad of watercress/rocket with some lemon juice or my courgette salad below…

Courgette, Almond & Lemon Salad (Serves 4)

  • 4 large courgettes, chopped in matchsticks
  • 100g flaked almonds
  • 1 handful chopped coriander
  • Handful basil, leaves roughly ripped
  • Zest 1 lemon
  • Parmesan cheese to serve.
  1. Heat a frying pan over a high heat. Add the flaked almonds and toast for a few minutes until beginning to turn golden. Keep your eye on these, shaking often as they will burn quickly. Set aside in a bowl.
  2. In this bowl, add the coriander, basil and the zest of the lemon.
  3. Heat the frying pan again until hot and add just a small tsp of olive oil.
  4. Add the courgette matchsticks and fry quickly, shaking the pan often. You don’t want to colour them or turn them soggy, you just want to warm them and take the raw edge off.
  5. Season well with freshly ground pepper and salt.
  6. Remove from the heat and toss with the almonds and herbs.
  7. Peel over (using a speed peeler) some nice wafers of parmesan cheese. Serve!

Spring Stew

his green spring stew celebrates vegetables but warms the stomach and is a nice transition from a cold Spring day to a Summer evening! You can absolutely experiment with adding different vegetables such as those listed below – weights and measures are also very rough here. Use your hands and throw things in! Just be concious of the cooking times of the different vegetables you choose – asparagus will need to just touch the heat before its overcooked, while green beans will need a little more time. So add these along the way accordingly. Open to variation but the lardons and garlic provide a good foundation and depth of flavour to build on so I recommend these as a must.

I cooked and served this with a delicately fried piece of seabass but a pan fried fillet of soft pink trout would be an excellent and seasonal choice. Topped with a dollop of homemade and indulgent hollandaise (see here) if you want to take this to a higher level or add another dimension.

Serves 2

  • 2 x seabass/seabream/trout fillets
  • 300g frozen garden peas (approximate weight)
  • 2 x little gem lettuce, chopped roughly
  • 200g smoked bacon lardons
  • 200g sugar snaps peas/green beans/asparagus tips/chopped courgettes (or a mixture of them all)
  • 1 red onion, sliced thinly
  • 1 large garlic clove, chopped finely
  • 1 bunch flat leaf parsley, chopped
  • 1/2 lemon, juice only
  • 1/2 stock cube
  • 1 tbsp soft unsalted butter (For the beurre manie, see Cheffy Tip!)
  • 1 tbsp flour

Cheffy Tip: I often use a ‘beurre manie’ (aka, kneaded butter) when I want to thicken a sauce but not make a white sauce or a roux. When you make a casserole and the sauce is a bit thin, or when you want to make the juices in a pan a bit thicker this is your tactic! When you mix the butter and flour into a paste, you coat the flour in butter particles. That way, when you stir this paste into hot sauces and liquids, the butter melts and distributes the flour particles evenly ensuring there are no lumps! (Ideally). You can make a small bowl and then add in tablespoons bit by bit until the thickness desired.

  1. Heat a splash of olive/sunflower oil in a frying pan and sauté the red onion for 8-10 minutes until translucent and softening. Continue cooking until they begin to turn a little golden but don’t burn. Season well.
  2. Add the garlic and cook for a few minutes only.
  3. Add the bacon lardons and cook through until crispy.
  4. Crumble the half stock cube into a mug and add some hot water (about 300ml but its not exact, you won’t use it all, it will have to be used by eye)
  5. Add the frozen peas and toss briefly. You now need to work quickly as the pea, sugar snaps and lettuce will cook fast and you don’t want soggy overcooked fresh greens! Ideally the vege/lettuce should be al dente.
  6. Pour a good splash of the hot stock into the frying pan, enough so that there is a ‘sauce’ that will simmer you veges but not so that its swimming! You don’t need to use all the stock but its there to balance the sauce as you wish. Bring to a simmer.
  7. Meanwhile, in a small bowl mash the soft butter with the flour to a paste until dough like (this is called a ‘beurre manie’). Whisk this quickly into the liquid in the frying pan – I stress quickly to ensure no lumps. This ‘paste’ will thicken the sauce but ensure no lumps. Simmer very gently and you should see the sauce start to thicken a touch. Make/add more more paste as needed if you’ve added lots of stock.
  8. Once you’ve done this, add the chopped little gems and the vegetables of choice and cover the pan with a lid. Let the heat and sauce steam the veges just a touch to let it warm but not go too soggy.
  9. The ‘stew’ should have a thick gravy like sauce but its shouldn’t be swimming in moisture so if it is, just turn the heat up a notch and reduce some of the liquid down. Remove the pan from the heat when ready, check and season as needed and scatter in the chopped parsley.
  10. Finally, add a good squeeze of lemon for seasoning.
  11. Enjoy with a pan fried fillet of fish or steamed cod. Trout would be a great addition here.

Vietnamese Chicken Salad

his recipe was required on a warm summer evening when a healthy dinner was the priority but sustenance was a must. I took inspiration for this from one of the simplest and freshest salads I greedily devoured at an Asian supper club I went to last year. If you haven’t been to or heard of Uyen Luu and her culinary adventures then I highly encourage you to head over to her website (see here). But not yet…read my blog post and cook this recipe first!

This recipe is all about the freshness, variety and abundance of herbs – these are vital and will either make or break the dish. Uyen’s version is far cleaner, using poached chicken that she shreds and stirs throughout the salad. This is ideal as a fresh starter but my hunger and craving demanded something crispier and oiler so I opted to fry my tender succulent chicken strips. I also opted for a punchier dressing, using lime, sesame and soy, than Uyen’s simpler version but both are eqaully as delicious.

One thing we do share is the need for prawn crackers here. Personally if you can’t get hold of the big, golden ones they offer in the best Thai restaurants, then the cheaper the better! And I suggest you buy 2 bags as if you’re anything like me the first bag gets demolished during cooking.

Tip – If you really want to make this salad to its best (and generally for a must-have in the any keen cooks kitchen pantry) then I strongly recommend you buy a julienne peeler noted below. They might occasionally shave your fingers off (beware – they’re sharp!) but hey…its worth it for such a great salad.

Serves 2

Salad

  • 2 chicken breast, cut into thin strips
  • 2 carrots
  • 2 courgettes
  • Large bunch basil, leaves picked
  • Large bunch mint, leaves picked
  • Large bunch coriander
  • Large handful salted, roasted peanuts, lightly crushed.
  • Prawn crackers to serve

Picked Onions

  • 1 red onion, sliced
  • 3 tbsp cider vinegar
  • 3 tsp caster sugar
  • Salt and pepper

Dressing

  • 1 large garlic clove, crushed
  • 2 teaspoons freshly grated ginger
  • 1 large red chilli, finely chopped
  • 2 tbsp soy sauce
  • 2 tsp sesame oil
  • 1 1/2 tsp fish sauce
  • 2 tbsp lime juice
  • 1 tsp runny honey
  1. Start with the onions. Combine the vinegar and sugar in a shallow bowl and add the sliced onion. Season, combine and set aside for 20-30 minutes.
  2. To make the dressing, combine the ingredients in a jam jar and shake well. Taste. This is vital as everyones soy sauce is different (low salt, normal, high quality, low quality etc) so all dressings will taste different. Add more lime/soy/fish sauce to taste. Don’t be afraid to go punchy as it will need to told its own when applied to the salad.
  3. Make the salad. (Using a julienne peeler will give you the best results here (see here), but if you’re patient, then you can very very finely slice the carrots and courgettes into strips. Alternatively, you could use a courgetti machine but it won’t give you quite what you want here.) Julienne the carrots and courgettes into a large bowl. Chop the herbs roughly together and add 3/4 of them to the bowl. Add the roasted, chopped peanuts.
  4. Drain the onions after 20-30 minutes of steeping and add all but a handful of these to the salad. Mix all to combine well and set aside while you cook the chicken.
  5. Heat a frying pan until hot and add a splash of vegetable/sunflower oil. Season the chicken strips and fry on a high heat until just cooked and golden but still moist.
  6. Remove from the heat and use forks to pull the chicken into strips.
  7. Dress the salad quickly with the dressing.
  8. Divide the salad between two bowls and top with the succulent chicken (or you can stir the chicken throughout the salad). Scatter over the raminaing handful of red onions and herbs.
  9. Serve with prawn crackers and devour with chop sticks.

 

Creamed Spinach & Goats Cheese Crumble

appy New Year! This was quite rightly a while ago now. January has come and gone and I’ve yet to even blog a shortbread biscuit or mince pie. But I’ve been sunning myself on South Africa’s beaches, drinking from their vineyards and eating…biltong. I don’t regret my absence. However, it has been a shameful while since I’ve given FITP some loving attention. Importantly I must confirm it is NOT because I’ve stopped cooking or experimenting. My pans continue to earn their keep and my fellow friends kept fed and watered. Its been quite an adventure over the past months and that combined with the lack of natural light, I’ve had limited time to take pictures worthy of my perfectionism and blogging standards. Recent stressful distractions at the later end of 2017 have sucked my what would have been ”recipe daydreaming time” for my blogging creations. More so I have sadly (?) opted for either comfort eats or trusty go-tos. That said there have been some blog worthy comfort eats that will have to grace these pages before the summer…

But this Monday evening in early February once again faded into another dark quiet Monday with nothing to excite me except the idea of coming home for dinner and a round of ‘Silent Witness’ (Judge as you will). That coupled with the tight budgets I’ve restricted myself to in order to fund my tenacious sun worshiping this year means that experimenting is also not such an attractive prospect for the bank balance. This dish therefore fits quite nicely. Its amazing what a £1.20 bag of frozen spinach can make and just how far it’ll go. You’re skeptical about spinach going a long way…I can tell. But this could feed a vegetarian army if such a thing exists.

Tip – opt for a larger more shallow baking dish for a better eat. Mine was a little deep and small.

Serves 4-6 (Adapted from Jamie O’s classic here)

Ingredients

  • 1kg frozen spinach ‘blocks’
  • 1 red onion, chopped finely
  • 2 garlic cloves, crushed
  • Nutmeg
  • 150g soft goats cheese
  • 100g breadcrumbs OR bread
  • 100g oats
  • 100g cold unsalted butter, cubed
  • 50g flaked almonds
  • 250ml creme fraiche
  • 1 lemon
  1. Preheat the oven to 180.
  2. Start by sweating the onion in a little oil in a large frying pan until soft and translucent. Add the garlic and fry for a few more minutes.
  3. Add the spinach ‘blocks’ and turn up the heat to a medium setting. You want to cook out the spinach for a out 10 minutes until the blocks have melted down and you have evaporated the majority of the water.
  4. Meanwhile, blitz the bread in a processor into breadcrumbs. Season well.
  5. Add the oats and pulse lightly just to combine.
  6. Add the cubed butter and blend until you have a crumb like texture.
  7. Stir in the almonds and reserve this topping for later.
  8. Once the spinach has reduced in moisture, grate in a good few gratings of nutmeg. Add the mixture to the food processor and blend until smooth. Taste and season well.
  9. Add the creme friache and the zest of the lemon and pulse to combine. (These steps are optional. If you don’t have a processor you can simply stir the creme friache and spinach together to achieve a more textured mix).
  10. Tip a third of the mixture into a shallow baking dish (In hindsight, the one I used was a little deep). Crumble over a third of the goats cheese.
  11. Repeat with the next layer alternating with goats cheese and spinach. (Alternatively, you could add the goats cheese to the spinach mixture and pulse lightly. I preferred having nuggets of goats cheese rather than an overall flavour throughout).
  12. Once you’ve used up all the mixture, top the spinach evenly with the crumble.
  13. Bake in the oven for about 35-40 minutes until the crumble turns a golden brown and the juices from the spinach are starting to bubble up around the edges.
  14. Dive in!

 

 

Spiced Bass, Bulgur Wheat Salad, Lime

What started out as a loss of inspiration the other evening turned into a pretty delicious quick and tasty meal for my adoring sister and I for a casual and relaxing Friday night a few weeks ago. A breeze to knock up which was appreciated as we barely kept our eyes open after a long week and hard work. Tasty and nutritious with a beautiful girly scattering of rose petals. Sorry chaps, girls night in. After a few glasses of something crisp and aromatic (I recommend maybe a Gewürztraminer) I highly recommend topping this off with a helping of trashy Reeses peanut butter cups for pudding…A bit of an oxymoron to the meal but moderation in moderation.

Serves 2 

  • 80g bulghur wheat
  • Handful raisins
  • Juice 1/2 lemon
  • 1 large bunch coriander, chopped
  • 1 large onion, cut into half moons
  • 1 tsp ground cumin
  • 1 lime, zest and juice
  • 200g yoghurt
  • 2 seabass fillets
  • 1 tbsp Ras El Hanout
  • Pinch rose petals (optional)
  1. Start by cutting the fish fillets in half and season. Mix with a tablespoon of olive oil and the Ras El Hanout and massage this in. Set aside.
  2. Slowly cook the onions now. Heat a splash of light oil in a frying pan and gently soften and fry the onion slices for about 10 minutes until just beginning to turn golden brown and crisp. Once soft and gold stir in the cumin and remove from the heat.
  3. Meanwhile, cook the bulgur wheat by simmering in boiling water until just tender (about 5-8 minutes). Drain well and leave to dry a little. Season.
  4. Stir the onions, raisins, the chopped coriander (save a handful for garnish) and mix to combine. Check the seasoning then add the juice of the lemon. Fork through to combine the flavours and set aside.
  5. Mix the yoghurt with the juice of the lime and the majority of the zest (save a pinch for garnish). Season and set aside.
  6. Now you’re ready to cook your fish. Heat a frying pan with a little oil until hot. Fry the fish, skin side down for about 2-3 minutes until crisp. Flip onto the flesh side for the final 30 seconds then remove from the heat.

  8. To serve, spoon half the yoghurt mixture into the centre of a plate. Top with some of the bulgur wheat salad. Finally top with fish and garnish with some chopped coriander, lime zest and rose petals.

Spanish Lamb Shanks

I

adore slow cooked dishes especially as it usually involves a a budget friendly cut such as lamb shanks. My favourite way to cook meat, besides the barbeque obviously…But while the first May bank holiday weekend delivered us a beautifully sunny and fresh evening, the morning hadn’t been as promising for a barbie. My sodden raincoat and squelching trainers sat drying in the sun were evidence enough. With not much time in my working week to knock out a slow cooked creation, the bank holiday offered the perfect opportunity. So a slow cooked, tender, succulent lamb shank in a glossy, sticky sauce studded with manly chunks of chorizo and vege was a definite good alternative. Scattered with fresh mint served on some creamy silky parsnip mash we went to bed with happy stomaches. Oh and we might have finished the meal with some bank holiday brownies. Ahem….

Serves 4

  • 4 lamb shanks
  • 300ml hot beef stock
  • 350ml red wine (Rioja is suggested)
  • 200ml balsamic vinegar
  • 4-6 garlic cloves
  • 2 bay leaves
  • Handful of fresh rosemary, leaves picked
  • 125g chorizo, sliced
  • 1 red onion, cut into wedges
  • 2 carrots, sliced into chunks horizontally
  • Fresh mint to serve
  • Olive oil
  • Freshly cracked black pepper and salt
  1. Preheat the oven to 150°C. Heat a large casserole dish on a medium high heat and add a good splash of olive oil. Season the lamb shanks well and brown on all sides in the pan until golden and crisp in places then remove to a plate.
  2. Using the same pan, heat the wine and vinegar and boil for about 5 minutes to simmer off the sharpness of the liquids.
  3. Add the bay leaves, rosemary, some seasoning and the hot stock. Peel the garlic cloves and crush lightly with the back of a knife. Finally add these and the lamb shanks submerged in the liquid.
  4. Place in the oven for 2 hours with the lid on.
  5. After 2 hours, remove from the oven and baste. Add the chopped onion, carrot and chorizo and turn the oven up to 180°C. Remove the lid and place in the oven for a further hour to brown and reduce the sauce.
  6. After this time the meat should be deliciously tender and falling off the bone. Remove the dish from the oven. Place the lamb shanks onto a warm plate and cover with foil while you deal with the sauce. Bring the liquid to a boil on the hob and simmer for about 5-10 minutes to reduce and thicken the sauce (Add 1 tbsp of cornflour mixed with 1 tbsp of cold water if needed and whisk this in to thicken further). Taste and adjust the seasoning.
  7. Place the lamb shanks back in the glossy sauce and pop in the oven to keep warm while you prepare the side dishes. I served mine with creamy parsnip mash and purple sprouting broccoli.

Serve one shank per person in a warm bowl a top some creamy mash with some vege and sauce. Scatter over some fresh mint and enjoy!image

WINE: Nothing seems more appropriate here than a native Spanish vino and something substantial to complement the lamb. Try a Rioja such as the La Rioja Alta, 2008 Viña Alberdi Reserva available at Armit Wines.

Gruyere and Onion tarts

This recipe (that is religiously made every year on Christmas eve in the Wardlaw house), is courtesy of Delia and has always been the most deliciously simple combination. For some reason we didn’t make it this Christmas eve, so feeling cheated I found myself whipping out a batch for a warming lunch in this Christmas provoking weather….

Filling

  • 2 eggs
  • 75ml single cream/creme fraiche
  • ½ tsp mustard powder
  • 75g Gruyere cheese, grated
  • 25g butter
  • 2 onions, finely chopped
  • Cayenne pepper

Pastry

  • 175g flour
  • 75g butter
  • 50g cheddar cheese, grated
  • ½ tsp mustard powder
  1. For the pastry, rub the butter and flour together and add the cheese, mustard and cayenne pepper. Add enough water to bring together to form a dough and then wrap and rest in the fridge for 20 minutes.
  2. Preheat the oven to 180°C and grease some small tart tins. Roll the pastry out thinly and line the tins. Bake the cases blind with baking beans and parchment for about 15-20 minutes until turning a pale brown. Remove the beans/parchment for the last 5 minutes to cook the base. Leave to cool in their tins while you do the filling.
  3. Melt the butter in a frying pan and sweat the onions until soft and beginning to turn a golden colour. Do this slowly to get a good flavour (about 20-30 minutes). Set aside.
  4. Mix the eggs, cream and mustard powder together in a jug adding a pinch of cayenne according to taste.
  5. Fill the tart cases with the onion and grated gruyere and fill with the egg mixture. Scatter over a pinch of cayenne pepper.
  6. Bake for about 15-20 minutes until set. Remove from the oven and leave to cool slightly before tucking in.

I made a tomato salsa to top mine by finely chopping a mixture of coloured cherry tomatoes, some bruised thyme leaves, salt and pepper and a good glug of extra virgin olive oil. Leave to infuse and serve at room temperature atop your tarts with a green salad.
