These will pleasingly fill any anorexic looking biscuit tin. Thanks once again to Jamie Oliver’s help……
- 85g unsalted butter, cubed
- 85g caster sugar
- 130g polenta
- 50g plain flour
- Zest of 1-2 oranges
- 1 egg
- Rub the cubed butter into the flour, polenta and sugar
- Stir in the egg and orange zest
- Chill in the fridge for about 1 hour.
- Preheat the oven to 190°C and line a baking tray with parchment. Take walnut sized pieces of dough, roll into balls and flatten slightly on the tray.
- Bake for about 6-8 minutes until crisp and tinged round the edges. Leave to cool before removing from the tray!
